Our tasty butternut squash scones with carrot batons were a hit with our children at lunch. It's so satisfying to find food that is nutritious and that they adore :-)
Serves 8
INGREDIENTS
215g plain flour
50g caster sugar
1 tbsp baking powder
50g butter
300g squash (cooked and mashed)
60ml room temp milk
METHOD
- Mix together the flour and baking powder then rub in the cubed butter into crumbs
- Add the squash and the milk
- Mix dough and roll to approx. 1cm thick then cut and heat oven to 180 degrees
- Bake on a lined baking tray for 10-12 mins.
