Ingredients
350g fresh pasta
250g frozen peas
3 tablespoon spinach pesto
25g parmesan
200g chargrilled sliced baby courgettes
200g sliced chargrilled halloumi
Method
- Simply boil the pasta, tossing in the peas for the last 3 mins.
- Chargrill the sliced courgettes and halloumi then mix together with the pasta and your homemade pesto with a sprinkling of parmesan.
I throw in some extra basil leaves for the grownups! It's always helpful to have recipes up your sleeve that the children love and yet are tasty for parents too :-)
Ingredients (500g serves 8 children)
- 150g baby spinach
- packet fresh basil
- 75g grated parmesan
- 50g pine nuts
- juice from 1 lime
- 4-6 tbsp olive oil
- ¼ tsp salt
- ¼ tsp nutmeg
- 500g-1kg pasta spirals
Method
- Blitz all pesto ingredients in blender.
- Cook pasta and stir in pesto
