PASTA WITH HOMEMADE SPINACH PESTO, CHARGRILLED COURGETTES, HALLOUMI AND PEAS

Ingredients

350g fresh pasta
250g frozen peas
3 tablespoon spinach pesto
25g parmesan
200g chargrilled sliced baby courgettes
200g sliced chargrilled halloumi

Method

  1. Simply boil the pasta, tossing in the peas for the last 3 mins.
  2. Chargrill the sliced courgettes and halloumi then mix together with the pasta and your homemade pesto with a sprinkling of parmesan.

I throw in some extra basil leaves for the grownups! It's always helpful to have recipes up your sleeve that the children love and yet are tasty for parents too :-)

Ingredients (500g serves 8 children)

  • 150g baby spinach
  • packet fresh basil
  • 75g grated parmesan
  • 50g pine nuts
  • juice from 1 lime
  • 4-6 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp nutmeg
  • 500g-1kg pasta spirals

Method

  1. Blitz all pesto ingredients in blender.
  2. Cook pasta and stir in pesto
